Email language English only!

Hello,
I am working on a Bakery shop for my small business.
My shop is in French and my pages and everything else is French, my sql database is UTF8_ci.

However when an order is completed the email is in English and accented characters are wrong :
Quantité:  instead of Quantité:

Is there a simple solution?

Click on "Méthodes de Paiement" > select a payment method in the select field > edit the corresponding mails (see attached screenshot).
To remove the unwanted HTML entities, please replace the /modules/bakery/languages/FR.php with the attached one.
